Summertime Ballpark Potato Salad

It’s almost summer and that means it’s time for picnics!  Food, friends and sunshine make a super combo.

Tonight, I decided to cook up a new potato salad recipe and I feel like I hit a home-run with this hot-dog inspired dish.  Crazy, right?  I’ve always loved hot dogs (mostly for the toppings) so I  decided all of those things would taste just as good on potatoes.  Plus, I’m not that into mayo and I’m crazy for sour cream.  So, that’s the backstory… now, on to the instructions:

gather the goods:
4 medium potatoes
half a smallish onion
1/2 cup cilantro
1 diced tomato (or just use salsa)
3/4 cup sour cream
1/3 cup pickle relish
2 T mustard
salt and pepper
First, peel the potatoes and cut them into cubes (or whatever kind of potato shape you’re into).  Throw the cubes in a bowl in the microwave and cook them completely.  Then put them into the fridge to cool.

Now, chop up the onion and cilantro.  Here’s the part where I would dice up the tomato… but I didn’t have a tomato, so I just used a few tablespoons of chunky salsa.

Combine!  Sprinkle salt and pepper onto the potatoes, then mix in the rest of the ingredes.  (the amounts up there… are honestly, guesses i made after the fact).  Just like assembling the perfect hot dog, add ingredes to your liking.

It’s delicious and feeds four hungry folks.  Enjoy.
