Epicurean Evan
Saturday, May 16th, 2009I’m Evan, a chef and freelance writer from Austin, TX currently residing in New York City. I’m a lover of all things food and drink related and have been known to eat anything. I went to culinary school in Austin and worked at wild game restaurant which had a large role in shaping my overall food philosophies.
-Meat is awesome and drastically improved when cooked over direct flame of wood and smoke.
-A little spice never hurt anyone.
-Sauce makes everything better, mop it up. Mole = liquid love
-Ultimate truths are always simple. All you need is love, Batman beats Superman, bacon and cheese are delicious.
I live with my girlfriend who forces me to eat and make healthy dishes, but the plus is I don’t look like a rhino. Expect from me really tasty recipes, bad photography, a few restaurant reviews and whatever else emanates from my gullet.
For me, cooking is about touch. Once you have a basic skills set and have cooked enough to make a delicious meal without a recipe from your own imagination, you are a good cook. I don’t usually use recipes when I cook and encourage you not to as well. Think of a recipe as a set of loose guidelines instead of hard and fast rules.
