Jamaican Jerk Pork with Mango Salsa

It’s summertime and that means it’s the perfect time to get tropical. You can do this in small ways, such as sticking a flower in your hair, sipping pina coladas by the pool or making a caribbean inspired meal. Thusly, I present to you a recipe for Jamaican Jerk Pork with Mango Salsa and Cilantro-Lime Jasmine Rice. Don’t worry, it’s easier done than said.

Jamaican Jerk Pork

Mix together 1/2 c teriyaki sauce, 1/4 c worcestershire, 1/4 c olive oil,  and 1/4 c Jamaican jerk seasoning. Use to coat 2 lbs. of pork loin steaks and marinate for at least an hour. Grill pork till no longer pink.

Mango Salsa

Cut 3 ripe mangoes into bite size chunks. Dice the following as small as you can: 1/2 of a small white onion, 2 raw Serrano peppers, and a handful of cilantro. Mix together with a splash of lime. Refrigerate for 30 min to let the flavors chill out together.

Cilantro Lime Jasmine Rice

We’re following the directions on the bag pretty much, just adding a twist. Whatever the amount of rice you want to prepare, add some lime juice and chopped cilantro (don’t forget salt and butter) before cooking and then a little after its done for the fresh look and taste. Just make sure you buy Jasmine rice, its a more flavorful, aromatic rice. One more thing, the secret to perfect rice is to leave it alone!!  Don’t stir it, keep the lid on till the timer goes off and leave it on a pretty low heat.

When all components are finished, arrange pork on a bed of rice and garnish with mango salsa. Enjoy with a flower in your hair.
